I lived a few years in Provence , and there if you mention pesto it has to be basil pesto , honestly i’ve never heard of red pesto until i came to Ireland and started to browse online and in food magazine. At work we recently got red pesto for a new fish dish and i really like it especially with chicken , fish and pasta. This version is using sun-dried tomato but i heard of a version using roasted bell peppers , i will definitely try it in a future post .
*1 cup of drained sun-dried tomatoes ( do not throw the oil as it is prefect for marinating meat or fish)
*3 garlic cloves
*1 tbsp of chopped fresh thyme
*2 tbsp of olive oil
1.In a food processor , blend all the ingredients until smooth , season with salt and pepper .
2.The pesto can be stored in the fridge for a few days .
