Moules marinieres

Moules marinieres is  originally from Normandy but is a Belgium and north classic dish .  In my original county  mussels are served with a large serving of fries and a glass of beer.  I often recreate this dish as it is so easy to make and will please everybody.For this dish mussels have to be very fresh. Any raw opened mussels should be discarded along with the one that floats in the water as it is a signs of old mussels.

Moules marinieresIngredients:

Serves 4:

*2 kg of fresh mussels

*2 onions  sliced

*100 ml of dry white wine

*1 cup of cream

*1/3 cup of chopped parsley

*1 bouquet garni

*1 tbsp of butter

 

1.Wash the mussels in cold running water.

2.Sweat the onions with the butter and the bouquet garni for a minute.

3.Add the mussels , white wine and cook covered for 4 minutes or until the mussels are opened .

4.Add the cream , cook for 2 minutes .

5.Season , add the parsley and serve.
