Stuffed pheasant

Either my father and my fiancee’s father have their own stuffing recipe and i really love both . So i decided to merge both recipe into an ultimate stuffing , the best of both families. Luckily i got ahold of a beautiful pheasant which got complimented by this stuffing . It is  great recipe for Christmas ‘s roast turkey.

stuffed pheasantIngredients:


*1 pheasant

*1 cup of chicken liver

*2 cups of bread crumbs

*1 onion

*3 garlic cloves

*1 cup of sausage meat

*2 tbsp of chopped parsley

*1 tbsp of port wine

*2 tbsp of milk


1.Preheat the oven at 160 degrees Celsius.

2.Finely chop the onion and garlic and add to a mixing bowl along with the milk , port,breadcrumbs and parsley.

3.Chop the liver and add to the mix with the sausage meat.

4.Mix well the stuffing , season with salt and pepper and stuff the poultry with it .

5.Once the pheasant is stuffed , close the cavity with either butcher string or simply toothpick .

6.Roast 1h15 at 160 degrees Celsius  , while covering the pheasant with tin foil for the last 20 minutes of cooking.
