At home we are trying to replace our favorites takeaway food by easy and healthy homemade version . This was our latest experiment and it was delicious , it tasted better than the Chinese takeaway down the road . Definitely a recipe that we will cook more often .
* 4 chicken fillets
* 2 cups of fresh Chinese mushroom ( or if not available , one cup of dried mushroom and one cup of ordinary sliced mushroom)
For the marinade:
*1 tbsp of chopped garlic
*1 tbsp of dark soy sauce
*1 tbsp of rice vinegar
*1 tbsp of hoisin sauce
*1 tbsp of cornflour
For the sauce:
*1/8 cup of cornflour
*1/4 cup of water
1.Cut the chicken in chunks and add the marinade ingredients .
2.Mix and chill in the fridge for 10 minutes.
3.If you use dry mushroom , soak them in hot water .
4.When the chicken is marinated cook for 2 minutes in a hot wok with some vegetable or sesame oil .Put the chicken in a plate.
5.In the hot wok with some oil cook the mushroom for 2 minutes before adding the cooked chicken and the remaining cornflour and water mixture to thicken the sauce.
6.Serve on a bed of boiled rice
