Honey and lemon drizzle cake

honey-and-lemon-drizzle-cakeI am finally back nearly 2 years since my last post . A lot has happened since , i bought a house , got married and changed my  job . It’s been a crazy journey but it was worth it . Now that i am back i am in the process of changing the site’s name for a new start . My first post is this really good recipe for this lemon and honey cake , it was so good that the cake was eaten within a day  .


Serves 8:

*175 grs of butter

*zest of 1 lemon and juice from 3 lemon

*175 grs of caster sugar

*50 grs of granulated sugar

*100 grs of honey

*200 grs of self raising flour

*3 eggs


1.Preheat the oven to 160 degrees Celsius ,grease and line a 20 cm diameter cake tin.

2.In a saucepan cook the lemon juice,granulated sugar and honey to obtain a thin syrup . Leave to cool.

3.Beat the butter and caster sugar using a hand mixer until light and creamy . Gradually add the eggs one by one then fold in the flour and lemon zest .

4.Pour the mixture in the prepared tin and bake for 50 minutes or until an inserted skewer comes out clean .

5.Once cooked pierce a dozen of holes in the cake with a skewer and pour the syrup over it .Leave the cake to cool in the tin before serving .

Optionally i poached 2 finely sliced lemon in the syrup to garnish the cake but it is not not needed.
