During world cup season , snacks is an essential part of a good football experience . A few beverages and a selection of snacks is often served and 90 % of the time , the provided snacks are fatty and unhealthy. This bruschettas are a healthy , vegan and a vegetarian option that can be made in advance and served in seconds.
Serves 4:
*400 grs of ripe baby plum tomatoes
*1 handful of fresh chopped basil
*1 and 1/2 tbsp of extra virgin olive oil
*1 tbsp of balsamic vinegar
*1 finely chopped shallot
*salt and pepper
*8 slices of bread
1.Slice the tomatoes in three and place in a mixing bowl along with the remaining ingredients and mix, reserve aside.
2.In a griddle pan drizzled with olive oil , toast the slices of bread .Doing so will give the bread a nice grilled look and flavour.
3.With a spoon divide the tomato mixture on the bread , decorate with basil leaves and serve .
4.Any remaining tomatoes will be a great salad for lunch the following day.
